Studies of Emulsion Dynamics under Microgravity Conditions in order to Develop Designer Beverages using Microfluidic Liquid/Liquid Contacting Methods

This project represents one of the first approaches to combine the outstanding fluid behaviour in microgravity conditions with the efficient and precise microfluidic reaction technology in order to enable the production of emulsions with unique characteristics. The aim is the ability to utilize reported fluidic phenomena in microgravity to the point of the development of a microfluidic device that allows astronauts to design their own custom-tailored beverage. The composition of the beverages will be based on cloud emulsions to vary flavours and add nutrients, thus increasing the health and wellbeing of the astronauts during space missions.
